Veal Chop Parmesan.
My butcher Armando has some perfectly aged beef and great cuts of veal. I love the chops. I season them with some kosher salt, ground freah pepper and then dry bread the chop massaging in with your hands some grated parmesan cheese, fine panko bread crumbs with a sprinkle each of dried oregano, basil, thyme. Just enough to elevate the mixture flavours. Try some Cajun spices or chili if you like more of a kick. I like that the succulent taste of veal to be the main flavour hit. In a oven skillet pan over medium high heat, I add some olive oil and butter. When the pan is hot add the chops. Two fit well. I like to star cut a firm tomato and put some of the same seasonings and butter on top and grill in the same pan. Some steamed aspargus and a nice lemon butter roast potato make this a mighty tasty dinner entree.
