Skinny, Sexy and Smart Mango Chevre Tarts.
Peel and cut even strips of 2 fresh mango over a bowl into a sieve.
Collect all the juices and add juice from one lime.
1 heaping tbs. of marmalade into the juices.
Add 1/2 cup cream cheese and 1/2 cup goat cheese.
Mix and blend together using a spatula.
The juices and the marmalade should be enough sweetener.
Once blended keep to the side.
In another bowl add a cup of Anna’s cookies gingersnap crumbs and a cup of ritz or graham cracker crumbs.
Drizzle a few tbs of melted butter over the crumb mix and form into small ping pong ball size.
Flatten in your palms like making a patty fitting into a buttered tart tin repeating till 12 are made.
Now take a tbs full of the cheese mixture and pack lightly into the tart shell.
Bake for 25 minutes at 350 or use solar aluminum reflector oven. Remove and let rest.
Now add the strips of fresh peeled mango for best presentation. Yum!
Now you have made a great treat that are ready to share.
