Pizza 1963.
It all started for me here in Galt when this man came into my life. Wallace “Spud” Bush the owner operator of the First Pepi’s Pizza store in Galt. As a young boy at 13 I had a goodly amount of kitchen experience working with my chef Father at the Iroquois hotel. Hanging out with friends we would usually end the evening hanging out having a slice of Spud’s most excellent pizza. I remember my first slice was nirvana. Soon after, I had to explore all the different ways and tastes of pizza. In not to long a time I had a dough recipe down pat, a great pizza sauce recipe jar ready, the best charchutterie using old grandfather recipes Schneider’s bacon, hams, pepperoni and cheeses. Soon I was making pizza like a maniac and worked at many pizza places across Canada from Dawson Creek to Pelee Island and would usually find a spot on anyone of my early menu’s which I wrote over my chef career. Some 30 years back I ran into a young lad named Arron who like myself at his young age was into making pizza. Aaron opened his first Emilio Finatti Sicilian Pizzeria in White Rock BC. My deli was also in White Rock and I lived close by. Daily I would walk bye and Aaron and I would talk shop pizza pie. Our relationship started and now 30 plus years later and 4 more pizza store locations with a commissary, I’m proud to say that some of my tutoring and knowledge has led Aaron and his teams to quite an astonishing start. Lot’s of kudos and not just one but many Emilio Finatti’s Pizza. awards. What ago Celine and Aaron. Can’t wait to see that Stanislaus Apron on you! Now living here in Woodstock Ontario I’m looking for that prime location to ignite the pizza business showcasing an award winning pizza pie.
