Lizano Salsa

Lizano Salsa

On my travels I always am looking for interesting food items from the country I am visiting. I heard a lot about Lizano Salsa and after first trying it in Puerto Rico on Johnny Cakes filled with a filet of fried Dorado a member of the Tunis family [Gnathono-don Speciosus] I realised that this was the added flavour that was missing in my South American recipe dishes. I also met the visiting daughter of the Lizano family when I met her in my Deli in White Rock BC where she was promoting her line of Costa Rican...
Pineapple and Mango Salsa

Pineapple and Mango Salsa

Pineapple and Mango Salsa I love to cook using lots of spices and herbs that bring out the best of flavours in my personal recipes. I found that once you roast and blend some chosen spices like cardamom, anise, fennel, cumin, coriander and turmeric you have a good flavourful lite spice mixture that has no burning heat until you add some spicy hot peppers like cayenne or red/green chilies. Making a tasty salsa to dip corn chips or grilled pita breads in is simple to prepare and with little effort. Just use some different spices that add a little character to your own...

Rhubarb Fruit and Berry Cobbler

Tasty Rhubarb Fruit and Berry Cobbler. My aunt was quite a baker and she would tell me that her style of baking was mostly the old fashioned scratch colonial method. I still make this simple dessert when the first rhubarb along with the first berries appear and I find it is hands on friendly to make. This cobbler recipe is particularly good with strawberries and rhubarb, but you can use any fruit combinations. Banana, Peanut Butter and Mango, or Back Raspberry and Kiwi. You will need;...

Slow Roasted Cherry Tomatoes

Slow Roasted Cherry Tomatoes

Slow roasted cherry tomatoes are simple to do and is a great way to get those sweet ripe tomato’s to release their optimum flavours. They are great to add to Pasta or making a sauce. They are scrumptious on some garlic rubbed toasted bread crisps. They a real nice flavour to salads and stuffing. Lots of times during the winter months, I purchase the smaller tomatoes on the vine. In my opinion they carry the most flavour during the lower hours of needed sunlight. After a few days I will line a baking sheet with parchment paper and preheat the oven to 375 degrees....
