This is what the inside of one of my 45 foot mobile kitchen’s looked like.
This one had a huge fridge, several ovens and held a thousand gallons of water made with its own water purification plant, solar panels and butane cooking fuel. This work horse of a unit could be be set up in an isolated area running fully operational for 60 hours before needing off site fuel services or satellite refueling. This is what my boss expected my three kitchen’s to look like every day at start up because you never knew who would drop in to ask for some grub! FYI, if you should happen to have a stainless steel kitchen at home, the best thing to clean stainless steel is stainless steel curly pads. Your sinks, faucets, oven and pots will all come out looking new. Vinegar and baking soda will clean out the sinks and drains and sanitize your counters and knives. When you needed a 98% to pass without penalty from the health inspectors which were always on patrol, plus the suits that were hired to make sure everything was accountable use steam cleaning to make the jobs time smart.
Daily cleaning and maintaining a moving kitchen that was in service around the clock required a well orchestrated game plan and guidelines.
Just remember that someone like Director producer Ted Kotcheff or Actor Kathleen Turner could be standing in my kitchen asking if they could show me a recipe they would like me to have cook for them while shooting the feature film.
The time and energy spent is a good marker for buying a durable surfaces that can be cleaned PDQ.
