Lemon Ginger Thyme Roast Chicken.
I brined this roasting chicken in a kosher salt, lemon juice and thyme base for 12 hours. I rinsed off in a cold water bath. Placed on a large sheet of parchment paper. Rub the bird down with a tablespoon of soft butter. Massage it into the legs and breast. Now grate some fresh lemon rind and pick the leaves of fresh thyme. I also grated one Tbs. of fresh ginger and fine chopped two spring onions and minced 2 garlic cloves, sprinkle with some salt and pepper. Add half rind less lemon and place into the cavity. Completely wrap up into a closed bag with the parchment paper. Place into a roaster and cover. The steam from the juices will stay closer to the meat being packed in paper, there for giving you a very flavor succulent bird.
It takes about 2 hours roasting at 350 degrees for a 2.5 kg bird.
BBQ-ing is the best way to get optimum flavour.
Serve with a tasty salad for lunch or make it special dinner with some nice fluffy basmati rice and amaretto green beans. Yum!
