Kitchenman TV Guide Meat Loaf

One of the great things about living in White Rock is the great people I’ve met. I do my shopping here in White Rock because of the service and gratification the different store owners and their employees exude. All around us the small town camaraderie is slowly diminishing and it makes me feel proud that my wife and I live in such a great community. The major changes to the core of the city have added quite a feeling of mixed emotions to a lot of the long-time residents. For the last 20 years Buy Low Foods here in White Rock has been my favourite grocery stores to get my weekly grocery items and not only because several times a week they make fresh carnival style popcorn that I love to munch on while watching the Canucks. The front of the store girls Debi and Sue carry a big stick making sure everything is ship shape and done right. The aisles are always fully stocked, spotlessly clean with a great selection household item. They carry a large selection of organics and a fine assortment of Dutch and British condiments and goodies. Hector makes the vegetable and fruit selection is deluxe. You can always count on the best produce available being displayed by considerate personal. Whenever I get the hankering for a home comfort dinner of meat loaf, mashed potatoes and fresh greens, Ed the butcher puts together this great ground meat three pack of beef, veal and pork which is most perfect for making this recipe. Ed is a gregarious sort of guy that is always happy to be of assistance and fill your meat requirements with a winning attitude. The other needed ingredients for this retro recipe from an old 50’s TV Guide French’s Mustard recipe are fresh on the shelves at Buy Low. This recipe is simple to do and while it’s baking makes such a nice kitchen aroma the family will be checking in regularly with, “is it dinner yet!”

You will need:

  • 8 oz. each of ground beef, veal and pork. [24 oz.’s. total]
  • 1 very small onion diced fine
  • 1 minced glove of garlic
  • 1 large egg beaten
  • ¾ cup of fresh bread crumbs
  • 2-3 dashes of Tabasco Sauce
  • 2-3 dashes of Worcestershire sauce
  • 2 tbs of Heinz Ketchup
  • 1 tbs of French’s Yellow Mustard
  • 1 packet of Lipton’s French Onion Soup Mix [Use all the dried onions and only about half of the soup base powder to taste or it will be too salty.]
  • 1 tsp fresh chopped parsley
  • 1 dash kosher salt and black pepper.
  • 1 packet of Club House Brown Gravy Mix [Follow pkg. directions and prepare.]

Now in a large bowl add the ground meats and all the other ingredients. [Not the gravy.]

Place your hands under running water and with both wet hands blend the mixture together wetting your hands again and adding some moisture.

When mixed together pat firmly and form a kneaded ball leaving covered in the bowl for 30 minutes while the flavours infuse the meats.

Pre heat the oven to 350 degrees and using an oiled loaf pan pack in the meatloaf or form the meatloaf by hand and place into a baking dish.

Place on the middle rack and bake for 1 hour and 10 minutes or until 195 degrees.

Turn oven off and remove the meatloaf draining off any juices into the premade gravy for some extra flavour.

Let the meatloaf rest for 10 minutes till it cools then set it back into the warm oven and complete the mashed potatoes and green veggies.
