Italian Wedding Soup; Back in Vancouver while waiting for the new Planet Hollywood Restaurant to finish construction, I took on a catering position for a very well-known off Broadway play called Tony n’ Tina’s Wedding. The 150 paying guests would first go to the church and be part of the couples ceremonies. There were play actors sitting at different tables that would interact with the wedding family. Some were real funny, some were bitter, lots were just drunk uncles and many misfits humour.
It was a fun job three times a week and later after the church wedding ending had the guests come back to the restaurant on Hastings Street for the party of eating drinking and dancing. Believe me a lot of the customers took it to the extreme believing they were just at a real wedding. I prepared a great Italian Wedding Soup that got standing ovations when I was introduced to the crowd. A bio about the actors.
A Vancouver couple who have wed each other more than 60 times are tying the knot once again, but this time it’s for real.
Ashlee Asconi and Giovanni Tempesta were actors in the Vancouver production of the long-running play Tony n’ Tina’s Wedding in 2006, when they pledged themselves to each other in matrimony three times a week.
“We’ve married 60 some-odd times before,” said Asconi.
And Tempesta had already played Tony in the play for nine years before Asconi joined the cast. By then, he had been fictionally hitched about 500 times to a series of different Tinas.
“I’ve had a lot of practice,” said Tempesta. “I know what I’m doing.”
Why is it Called Italian Wedding Soup?
Ever wonder how it gets its name? I always thought maybe it was a traditional meal served at Italian weddings, but in actuality, it has nothing to do with a real wedding.
The name actually comes from the way the flavors combine, like a happy marriage!
What Pasta is Used in Italian Wedding Soup?
Traditionally, acini di pepe pasta is used, which looks like little pearls. If you can’t find that pasta, ditalini or orzo pasta could be used.
Here is my recipe version;
Ingredients
Meatballs
8 ounces ground beef
8 ounces ground pork
1/2 cup fresh breadcrumbs
3 Tablespoons minced fresh parsley
1 teaspoon kosher salt
1/2 teaspoon dried oregano
1/2 teaspoon black pepper
1/2 cup shredded Parmesan cheese
1 large egg
2 Tablespoons olive oil
Soup
1 Tablespoons olive oil
1 medium yellow onion minced
2 large carrots peeled and diced
2 stalks celery diced
3 cloves garlic minced
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
1/4 teaspoon dried dill
1/2 cup dry white wine
9 – 10 cups chicken bone broth
1 cup dried acini di pepe pasta
5 ounces chopped baby spinach
shredded Parmesan cheese for serving.
