Only a working chef knows how difficult it is to make good food consistently. Working at the New Knotty Pine in Waterloo gave me the a beautiful dinning room and kitchen and one stunningly beautiful dining room.
I had a very eager and talented team and the chance to show off my contemporary style of cooking.
Interesting food items that everyone would enjoy, handcrafted and made to look and taste delectable.
Here is one of the most ordered recipes for my famous mouth-watering Hot Seafood Salad. Change up the seafood to your favourites and during the season when there are lots of fresh veggies to use. Be inventive and create your own deluxe salad.
Ingredients you will need;
A couple pieces of shrimp, scallops, some calamari Ahi tuna and some crab meat
Dressing:
4 ounces fresh goat cheese
4 ounces low fat plain yogurt
1 tablespoon lemon zest
1 clove garlic, chopped
1 tablespoon fresh mint, chopped
1 tablespoon honey
2 tablespoons fresh lemon juice
2 tablespoons olive oil
1/4 teaspoon salt
1/4 teaspoon ground cumin
1/4 teaspoon freshly ground black pepper.
Combine dressing ingredients with 6 tablespoons water in a blender.
Blend till you have a smooth frothy mixture and adjust seasonings if necessary.
Set aside and remix again before use.
In a sauté pan add a splash of olive oil.
Heat to medium and add a tablespoon each of chopped shallots and green onions.
Sauté mixing till slightly tender. Do not scorch.
Add your selection of a few shrimp, a few scallops, some calamari Ahi tuna some crab meat a splash of fresh lemon juice.
Mix and sauté till almost cooked then add a splash of vodka to flambé.
Add a hand full of julienne mixed veggies like carrot, celery, radish, tomato, cucumber.
A few orange and grapefruit segments with some salt and pepper to cure.
Add enough of the dressing until all items are well coated and heated through.
In a bowl arrange some fresh lettuces and like iceberg, radicchio, romaine, and spinach.
Now pour over the lettuces the hot seafood and veg mixture and give it a light tossing.
Plate and serve this wilted hot seafood salad arranging for best presentation.
Top with some baked parmesan cheese flakes.
