Ground Lamb Ginger Lettuce Wraps.
The fresh ground lamb can be the centre of any good recipe. I like to mince fresh lamb shoulder with a sharp knife adding small chunks of peeled ginger at the same time. Garlic, pepper, fennel bulb and onion added as you mince all the ingredients together. Leave little chunks and add potato or daikon radish to the mixture for more filler. Fresh ground sea salt, pe
pper, cumin, coriander seeds with a dash of allspice. On high heat Sauté all the ingredients in some olive oil stirring till all the ingredients are picking up charring and light browning. A splash of some vodka or white wine to add some moisture and acid flavourings. Squeeze some fresh lemon and orange juices as you finish cooking and grate some orange and lemon peel essence or fried onion strips on top for extra flavouries. I use hearts of leaf lettuce and romaine for family style indulgence. The hydroponic butter lettuce or Belgian endive would be nice for appetizers. Get out the plates and some of your favourite hot, peanut or tamarind sauce and have a Wrap Party.
