Slow Roasted Cherry Tomatoes

Slow Roasted Cherry Tomatoes

Slow roasted cherry tomatoes are simple to do and is a great way to get those sweet ripe tomato’s to release their optimum flavours. They are great to add to Pasta or making a sauce. They are scrumptious on some garlic rubbed toasted bread crisps. They a real nice flavour to salads and stuffing. Lots of times during the winter months, I purchase the smaller tomatoes on the vine. In my opinion they carry the most flavour during the lower hours of needed sunlight. After a few days I will line a baking sheet with parchment paper and preheat the oven to 375 degrees....
Very Sticky Toffee Pudding

Very Sticky Toffee Pudding

Sticky Toffee Pudding A good sticky toffee pudding should be more than simple sugar hit. Some of the British cooks I work with show me a lot about the English ways of cooking home comfort foods that they were brought up on! This British lady baker made me this most scrumptious sticky toffee pudding at the Rim Rock Resort. Lots of touring Brits and Scots, stayed at this hotel and I was taken aback by their love for this treat. It was very tasty and sure hit all the right notes for a good dessert finish. It took me a few trial and errors to perfect the right texture and...
Lemon Coconut Layer Cake

Lemon Coconut Layer Cake

Lemon Coconut Layer Cake One of my prize recipes that I was taught way back, came from my Aunt Marie. She was an awesome scratch baker and did lots of baking for her church. I remember being close to her side waiting to help wash up any of those filling bowls and icing utensils. But I would first get to lick off all the tasty residue goodness first. It became a ritual and at that time I was totally unaware that I was being taught all her baking secrets. Years have past and I must say that I made this recipe several  times and it still is one of my favourite tasting...

The extra flavour boost comes from...
Chocolate Crack

Chocolate Crack

Chocolate Crack This recipe was shown to me by a Rockies mountain guide to share while cross country skiing in the back country. A  sweet treat to share of a salty toffee cracker cookie made with plain saltine crackers, but uncommonly addictive. This is serious stuff. And no wonder. This is an unbelievable delicious combination made with crunchy saltine crackers, caramel sauce turned into toffee caramel , topped with chocolate and some pistachios or any other roasted and salted nuts. Super easy and quick to make. Once you try this recipe you will see how fast it gets...
