Tasty Halibut Cheek Tacos.
Panko crumbs used to bread the cheeks. Pan fry till golden brown and set on a paper towel to rest.
In a bowl mix fresh snipped salad greens, pea sprouts, tomato chunks, slivers of sweeet bell peppers, orange sgements, mango peices, ripped cilantro leafs.
Blend 4 parts virgin olive oil to 1 part fresh squeezed lime juice, salt, pepper and 1 tbs of sweet rice vinegar.
Add to the greens and Mix well.
On a fresh warmed soft taco shell place some of the mixture and some aged shredded cheddar cheese and one peice of halibut cut into 3 roll up and slice on an angle.
Stack up right beside some of the greens and serve imediately!
