Comments Off on Roasted Tomato Bruschetta Crostini Toasts
Bruschetta or window bread is always welcome as a nice appy. I have found that as a simple item to assemble, nothing is tastier than some scrumptious roasted tomato bruschetta toasts. Cheap and cheerful way to use up some stale baguette and those ripening tomatoes.
Start with some day old bread and cut into squares or rectangles. Old focaccia bread works great.
Brush with some garlic infused virgin olive oil or herb garlic butter.
Place in the toaster oven and crisp them for a bout 5 minutes. Set aside covered with a towel.
Now in a bowl toss 2 cups sliced cubed pieces of tomatoes or half cherry tomatoes as show. These small cherry tomatoes are sweet and tasty through the winter. Into the bowl add fresh chopped basil and fresh grated parmesan cheese, sprinkle of the garlic infused olive oil and mix together. Place spaced evenly on to a baking sheet.
In a preheated 400 degree oven bake for 45 minutes or till the tomatoes have some charring and most of the moisture has been baked into the remains.
Remove and place into a bowl adding a little more parmesan and some herbs. Taste. Yummy right.
Place a spoonful on top the pretoasted crisps and sprinkle a little more parmesan and return to the toaster for a few more minutes.
Top with some fresh arugula greens lightly dressed with some oil and citrus vinegar for show and enjoy the kudos.
